Capsaicin Helped Scientists Understand Real Heat

The strange relationship between chilli and heat turned out to be scientifically useful.

Researchers used capsaicin to identify the receptor now called TRPV1.

Further work revealed that the same receptor responds to painfully high temperatures.

That discovery helped explain something fundamental: how physical heat can be converted into electrical signals that the nervous system understands.

The work on temperature receptors became important enough that David Julius shared the 2021 Nobel Prize in Physiology or Medicine for discoveries concerning receptors for temperature and touch.

So chilli peppers have contributed rather more to neuroscience than their appearance in novelty hot sauces might suggest.
